  • 1/2 Cup unsalted butter (melted and slightly cooled; 1 stick)
  • 1 1/2 Cups mashed very ripe bananas (about 3 large)
  • 2 Large eggs
  • 1 Tsp vanilla extract
  • 1 Cup all purpose flour
  • 1 Cup whole wheat flour
  • 1/2 Cup sugar
  • 1 Tsp baking soda
  • 1 Tsp cinnamon
  • 1/2 Tsp salt

Instructions

  1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan with nonstick spray.
  2. Add the butter, bananas, eggs, and vanilla to a large bowl and stir to combine.
  3. Stir in the flours, sugar, baking soda, cinnamon, and salt until combined.
  4. Pour batter into the prepared pan, smooth the top, and bake for 55–60 minutes or until golden brown and a tester inserted into the center comes out clean.
  5. Cool in the pan for 5 minutes, then remove and cool completely on a wire rack.
  6. Slice and serve.
