- • 1/2 Cup unsalted butter (melted and slightly cooled; 1 stick)
- • 1 1/2 Cups mashed very ripe bananas (about 3 large)
- • 2 Large eggs
- • 1 Tsp vanilla extract
- • 1 Cup all purpose flour
- • 1 Cup whole wheat flour
- • 1/2 Cup sugar
- • 1 Tsp baking soda
- • 1 Tsp cinnamon
- • 1/2 Tsp salt
Instructions
- Preheat the oven to 350°F and grease a 9×5-inch loaf pan with nonstick spray.
- Add the butter, bananas, eggs, and vanilla to a large bowl and stir to combine.
- Stir in the flours, sugar, baking soda, cinnamon, and salt until combined.
- Pour batter into the prepared pan, smooth the top, and bake for 55–60 minutes or until golden brown and a tester inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then remove and cool completely on a wire rack.
- Slice and serve.
