Ingredients

Buns
  • 3 1/2 Cups (420g) King Arthur unbleached all-purpose flour
  • 3/4 To 1 cup (170g to 227g) water, lukewarm
  • 2 Tablespoons (28g) butter, at room temperature
  • 1 Large egg
  • 1/4 Cup (50g) granulated sugar
  • 1 1/4 Teaspoons table salt
  • 1 Tablespoon (9g) instant yeast
Seed Topping (optional)
  • 1 Large egg white, whisked with 2 tablespoons cold water
  • Sesame seeds or preferred seeds
Butter Glaze
  • 3 Tablespoons (43g) butter, melted; divided

Instructions

  1. weigh or measure flour. Mix and knead all dough ingredients to form a soft, smooth dough.
  2. Cover dough and let rise until nearly doubled, about 1 to 2 hours.
  3. Gently deflate dough, divide into eight pieces, and shape each into a ball.
  4. Flatten each dough ball to about 3 inches in diameter and place on a baking sheet. Cover and rise until puffy, about 1 hour. Preheat oven to 375°F.
  5. Brush buns with half of the melted butter. For seeded buns, brush egg white/water mixture over butter and sprinkle with seeds.
  6. Bake 15 to 18 minutes until golden. Remove from oven and brush with remaining melted butter.
  7. Cool on a rack before slicing and serving. Store at room temperature for several days or freeze for longer storage.
