- • 1 boneless beef chuck roast (about 4 lbs)
- • Salt and pepper, to season
Instructions
- Preheat oven to 325°F. Season roast generously on both sides with salt and pepper. Place in a baking dish, cover with foil or a lid, and bake for 4 hours.
- Remove from the oven and shred into large chunks using two forks. If the roast does not pull apart easily, return to the oven for an additional 30 minutes.
- Raise oven temperature to 425°F.
- Toss shredded beef in the rendered fat and return to the oven, uncovered, for 10–15 minutes until crispy and caramelized around the edges.
- If using a smaller roast, use approximately 1 hour of cook time per pound.
