  • 1 boneless beef chuck roast (about 4 lbs)
  • Salt and pepper, to season

Instructions

  1. Preheat oven to 325°F. Season roast generously on both sides with salt and pepper. Place in a baking dish, cover with foil or a lid, and bake for 4 hours.
  2. Remove from the oven and shred into large chunks using two forks. If the roast does not pull apart easily, return to the oven for an additional 30 minutes.
  3. Raise oven temperature to 425°F.
  4. Toss shredded beef in the rendered fat and return to the oven, uncovered, for 10–15 minutes until crispy and caramelized around the edges.
  5. If using a smaller roast, use approximately 1 hour of cook time per pound.
