  • 1 Large ripe/spotty banana, mashed
  • 2 Tablespoons chia seeds
  • 1/4 Teaspoon cinnamon
  • 1/2 Cup gluten-free rolled oats
  • 3/4 Cup (180 mL) almond milk
  • 1/4 Teaspoon pure vanilla extract (optional)

Instructions

  1. Mash banana in a small bowl until almost smooth, then stir in chia seeds and cinnamon.
  2. Stir in oats, almond milk, and vanilla if using. Cover and refrigerate overnight or at least 2 hours.
  3. In the morning, stir to combine. If too runny, add 1 tablespoon chia seeds and refrigerate until thickened. If too thick, add a splash of milk and stir.
