A smoky, fizzy apple cider paloma with grapefruit, lime, tequila, mezcal, cinnamon honey syrup, ginger beer, and an optional chipotle-cinnamon sugar rim.

Ingredients

Paloma
  • 1/3 cup apple cider
  • 1/4 cup grapefruit juice
  • 2 Tbsp lime juice
  • 2-4 Tbsp cinnamon honey syrup
  • 1 oz silver tequila
  • 1 oz mezcal
  • ginger beer, for topping
  • sliced apples and sugared rosemary, optional
Smoky Sweet Rim
  • 1 Tbsp coarse sugar
  • 1 Tbsp granulated sugar
  • 1/2 tsp chipotle chile powder
  • 1/4 tsp cinnamon
Cinnamon Honey Syrup
  • 1/2 cup honey
  • 2 cinnamon sticks
  • 1/2 cup water

Instructions

  1. Make the cinnamon honey syrup by bringing water, honey, and cinnamon sticks to a boil. Simmer for 1-2 minutes, remove from heat, and cool.
  2. For the optional rim, mix coarse sugar, granulated sugar, chipotle powder, and cinnamon on a small plate. Rub a grapefruit or lime wedge around the glass rim and dip into the sugar mixture.
  3. Fill the glass with ice. Add apple cider, grapefruit juice, lime juice, cinnamon honey syrup, tequila, and mezcal. Stir well.
  4. Top with ginger beer and garnish with apple slices, sugared rosemary, or a cinnamon stick if desired.
  5. For a mocktail, omit tequila and mezcal and add 1 Tbsp extra apple cider or apple cider vinegar, 1 Tbsp extra grapefruit juice, and 2 Tbsp extra ginger beer.

Notes

The cinnamon honey syrup can be stored in a glass jar in the refrigerator for up to 2 weeks.
