Ingredients
- • 12 graham cracker sheets
- • 1/4 cup sugar
- • 1/2 cup butter [113 g], melted
- • 1 egg, at room temperature
- • 1/3 cup sugar
- • 16 oz cream cheese, softened
- • 2 tsp vanilla
- • 1/3 cup salted caramel sauce, plus more for serving
- • Coarse sea salt, optional
Instructions
- Preheat oven to 350 F. Line an 8x8-inch pan with foil or parchment and spritz with nonstick spray.
- In a blender or food processor, pulse graham crackers and sugar until fine crumbs form. Add melted butter and pulse until the mixture comes together.
- Press the crumb mixture into the prepared pan and bake for 5 minutes.
- While the crust bakes, mix egg, sugar, cream cheese, and vanilla in a medium bowl until smooth.
- Pour cheesecake mixture over the baked crust. Drop teaspoons of caramel sauce over the top and swirl with a knife, being careful not to disturb the crust.
- Bake for 20 minutes, or until the cheesecake is set.
- Cool at room temperature for 10-20 minutes, then refrigerate until completely cool.
- Serve drizzled with extra caramel sauce and coarse sea salt, if desired.
