Ingredients

  • 12 graham cracker sheets
  • 1/4 cup sugar
  • 1/2 cup butter [113 g], melted
  • 1 egg, at room temperature
  • 1/3 cup sugar
  • 16 oz cream cheese, softened
  • 2 tsp vanilla
  • 1/3 cup salted caramel sauce, plus more for serving
  • Coarse sea salt, optional

Instructions

  1. Preheat oven to 350 F. Line an 8x8-inch pan with foil or parchment and spritz with nonstick spray.
  2. In a blender or food processor, pulse graham crackers and sugar until fine crumbs form. Add melted butter and pulse until the mixture comes together.
  3. Press the crumb mixture into the prepared pan and bake for 5 minutes.
  4. While the crust bakes, mix egg, sugar, cream cheese, and vanilla in a medium bowl until smooth.
  5. Pour cheesecake mixture over the baked crust. Drop teaspoons of caramel sauce over the top and swirl with a knife, being careful not to disturb the crust.
  6. Bake for 20 minutes, or until the cheesecake is set.
  7. Cool at room temperature for 10-20 minutes, then refrigerate until completely cool.
  8. Serve drizzled with extra caramel sauce and coarse sea salt, if desired.
