Ingredients

  • Butter [225 g], for crust
  • 100 g caster sugar
  • 1 egg yolk
  • 1/4 tsp salt
  • Flour [240 g]
  • Butter [115 g], for caramel
  • 200 g light brown sugar
  • 1/2 tsp salt
  • 397 g condensed milk
  • 60 ml golden syrup
  • 250 g chocolate
  • 80 ml cream

Instructions

  1. Preheat oven to 170 C / 340 F. Line an 8x8-inch baking tin with parchment paper.
  2. Cream butter and caster sugar together until smooth.
  3. Mix in egg yolk and salt.
  4. Add flour and mix until a soft dough forms.
  5. Press dough evenly into the lined tin.
  6. Bake for 20-25 minutes, until lightly golden, then cool completely.
  7. For the caramel, add butter, light brown sugar, salt, condensed milk, and golden syrup to a saucepan over medium-low heat.
  8. Stir continuously until butter melts and sugar dissolves.
  9. Increase to medium heat and cook, stirring constantly, for 8-12 minutes until thickened and deep golden.
  10. Spread caramel evenly over the cooled crust and chill 1-2 hours, until set.
  11. For the ganache, heat cream and chocolate together over a double boiler and stir until smooth and glossy.
  12. Pour ganache over the chilled caramel and spread evenly.
  13. Chill at least 2 hours, or overnight for clean slices. Let sit at room temperature for 10-15 minutes before slicing.
  14. For clean cuts, warm the knife in hot water and wipe it between slices.
