Ingredients
- • 1/2 cup plus 2 Tbsp unsalted butter [142 g]
- • 1 1/4 cups light brown sugar
- • 2 large eggs, room temperature
- • 3/4 cup cocoa powder
- • 1/2 tsp salt
- • 1 tsp vanilla extract
- • 1/3 cup all-purpose flour [42 g]
- • 2/3 cup peanut butter cups, roughly chopped
Instructions
- Preheat oven to 350 F. Grease and line an 8x8-inch pan with parchment and set aside.
- In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, remove, and whisk. Repeat twice more until glossy.
- Cool slightly, then add eggs one at a time, whisking between each addition until the mixture lightens slightly.
- Add cocoa powder, salt, and vanilla extract.
- Fold in flour until just combined, then fold in peanut butter cups.
- Pour into the prepared pan and bake for about 35 minutes, testing for doneness beginning at 30 minutes. The edges should be set and the center should still be fudgy.
