Ingredients

  • 1/2 cup plus 2 Tbsp unsalted butter [142 g]
  • 1 1/4 cups light brown sugar
  • 2 large eggs, room temperature
  • 3/4 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup all-purpose flour [42 g]
  • 2/3 cup peanut butter cups, roughly chopped

Instructions

  1. Preheat oven to 350 F. Grease and line an 8x8-inch pan with parchment and set aside.
  2. In a large microwave-safe bowl, combine butter and sugar. Microwave for 30 seconds, remove, and whisk. Repeat twice more until glossy.
  3. Cool slightly, then add eggs one at a time, whisking between each addition until the mixture lightens slightly.
  4. Add cocoa powder, salt, and vanilla extract.
  5. Fold in flour until just combined, then fold in peanut butter cups.
  6. Pour into the prepared pan and bake for about 35 minutes, testing for doneness beginning at 30 minutes. The edges should be set and the center should still be fudgy.
