Ingredients
- • 1/2 cup unsalted butter [113 g], softened to room temperature
- • 1 large egg, room temperature
- • 3/4 cup sugar
- • 1/4 cup light brown sugar
- • 1 tsp vanilla extract
- • 2-3 tsp key lime zest
- • 1 3/4 cup flour [219 g]
- • 1/2 tsp baking soda
- • 1/2 tsp salt
- • 1 cup powdered sugar
- • 1 Tbsp key lime juice
- • 1-2 Tbsp milk
- • 1/4 tsp vanilla
- • 1/2 tsp key lime zest
- • Pinch of salt, optional
Instructions
- Preheat oven to 350 F. Whisk flour, salt, and baking soda together in a small bowl and set aside.
- In a separate mixing bowl, beat butter, brown sugar, and sugar with an electric mixer on high for 1-2 minutes, until light and fluffy.
- Add the egg and vanilla and beat until mixed in. Add lime zest, then beat in one-third of the flour mixture. Continue slowly adding the remaining flour mixture until a dough forms.
- Roll dough into 1 1/2-inch balls and arrange on a parchment-lined cookie sheet.
- Bake for 8-10 minutes. Cool on the cookie sheet for 2-3 minutes, then transfer to a cooling rack.
- Once cookies are completely cooled, whisk powdered sugar, key lime juice, milk, vanilla, key lime zest, and optional salt together for the glaze, adjusting the liquid or powdered sugar to the desired thickness.
- Let the glaze sit for several minutes, then dip cookies into the glaze or spread it over the tops with a knife.
- Allow the icing to set before serving. Store remaining cookies in an airtight container for 4-5 days.
