A homemade take on the iconic In-N-Out Double Double featuring thin smashed beef patties, melty American cheese, toasted buns, optional caramelized onions, fresh lettuce and tomato, and classic spread-style sauce.

Ingredients

  • 8 oz 80% lean ground beef
  • 1/2 tsp kosher salt (for patties)
  • 1/4 tsp pepper (for patties)
  • 2 Tbsp mayo
  • 1 Tbsp ketchup
  • 2 tsp sweet pickle relish
  • 1/4 tsp white vinegar
  • 1/8 tsp yellow mustard
  • tiny pinch salt (for sauce)
  • 2 Tbsp butter (for onions)
  • 1 medium sweet onion, diced small
  • kosher salt & pepper (for onions)
  • 2 burger buns
  • 1 Tbsp butter, softened (for buns)
  • 2 slices hot house tomato
  • 2 sheets iceberg lettuce
  • 4 slices American cheese

Instructions

  1. Cut four pieces of parchment paper into 4 1/2-inch squares. Mix ground beef with salt and pepper, then form into four equal balls. Press into thin 4 1/2-inch patties on parchment squares and refrigerate to firm.
  2. Mix all sauce ingredients together and set aside.
  3. In a large pan over medium heat, melt 2 Tbsp butter. Add diced onions, season with salt and pepper, and sauté until tender and deep golden brown, 10–12 minutes. Remove from pan.
  4. Spread softened butter on cut sides of burger buns and toast cut side down in the pan over medium heat for 1–2 minutes until deep golden brown. Remove from pan.
  5. Add 1 tsp oil to the pan along with the burger patties. Sear 1–2 minutes on the first side until browned, flip, and add a slice of American cheese to each patty. Cook 1 more minute, then stack patties so there are two patties and two slices of cheese per burger.
  6. Assemble: on the bottom bun add sauce, tomato, lettuce, stacked patties with cheese, and grilled onions. Top with remaining bun and enjoy.
