Granola

A crunchy, cinnamon-spiced homemade granola packed with oats, nuts, seeds, and a sweet maple coating. Perfect for snacking, breakfasts, or topping yogurt and smoothie bowls.

Ingredients

  • 3 Cups gf oats
  • 1 Cup raw almonds chopped
  • 1 Cup raw walnuts or pecans chopped
  • 1/2 Cup each pumpkin seeds & sunflower seeds
  • 1/2 Cup unsweetened coconut
  • 2 Tbsp cinnamon divided
  • 3/4 Tsp salt
  • 1/2 Cup olive oil
  • 1/2 Cup cookie butter or nut butter of choice
  • 1/2 Cup + 2 tbsp maple syrup
  • 1 Tsp vanilla

Instructions

  1. Preheat the oven to 320°F convection or 325°F.
  2. Add all dry ingredients except 1 tablespoon of cinnamon into a large bowl and stir to combine.
  3. Place wet ingredients plus remaining tablespoon of cinnamon into a small pot and heat over medium, stirring until fully combined.
  4. Pour wet mixture over dry mixture and stir until evenly coated.
  5. Divide granola onto two baking sheets, pressing firmly to ensure even baking.
  6. Bake for 20 minutes, rotate pans, and bake for an additional 10 minutes.
  7. Allow granola to cool completely before serving.
