Easter Dirt Cake

Ingredients

Pudding
  • 3/4 cup granulated sugar
  • 1/3 cup cocoa powder
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 4 cups milk
  • 1 Tbsp vanilla extract
  • 2 Tbsp salted butter
Cream Cheese Mixture
  • 8 oz cream cheese, room temperature
  • 1/2 cup salted butter, room temperature
  • 1 cup powdered sugar
  • 8 oz whipped topping (or 2 cups whipping cream, whipped to stiff peaks)
Oreo Crust
  • 14 oz package Oreos
  • 6 Tbsp salted butter, melted

Instructions

  1. In a large bowl, whisk together granulated sugar, cocoa powder, cornstarch, and salt. Set aside.
  2. In a large pan, heat the milk until steaming. Slowly whisk dry ingredients into the milk.
  3. Continue whisking until the pudding thickens and coats the back of a spoon.
  4. Remove from heat and whisk in vanilla and butter.
  5. Transfer pudding to a shallow dish, cover with plastic wrap directly touching the surface, and refrigerate until fully chilled.
  6. Once chilled, beat cream cheese and butter until smooth. Add powdered sugar and mix until combined.
  7. Fold in whipped topping until smooth. Add chilled pudding and fold until fully combined. Set aside.
  8. Crush Oreos into fine crumbs and divide in half. Mix half with melted butter and press into the bottom of a 9×13 pan.
  9. Spread pudding mixture over crust and sprinkle remaining Oreo crumbs on top.
  10. Decorate with chocolate eggs, peeps, green coconut, and chocolate carrots if desired.
