Ingredients
- • 1/2 cup unsalted butter [113 g], room temperature
- • 1 cup brown sugar, packed
- • 1 egg, room temperature
- • 2 tsp vanilla extract
- • 1/3 cup cocoa powder
- • 1 tsp espresso powder
- • 1 cup all-purpose flour [125 g]
- • 1/2 tsp baking soda
- • 1/2 tsp salt
- • 1 cup chocolate chips
Instructions
- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Beat butter and brown sugar in a stand mixer fitted with the paddle attachment on medium-high speed until fluffy, about 2 minutes.
- Scrape down the bowl, then add egg and vanilla and mix until combined.
- Add cocoa powder, espresso powder, flour, baking soda, and salt. Mix on low, gradually increasing to medium, until just combined.
- Fold in chocolate chips.
- Scoop dough onto the prepared baking sheet, spacing cookies 2 inches apart.
- Bake for 11 minutes, or until edges are set and centers are still gooey. Cool for 10 minutes on the baking sheet before serving.
