Ingredients

  • 1/2 cup unsalted butter [113 g], room temperature
  • 1 cup brown sugar, packed
  • 1 egg, room temperature
  • 2 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1 tsp espresso powder
  • 1 cup all-purpose flour [125 g]
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper.
  2. Beat butter and brown sugar in a stand mixer fitted with the paddle attachment on medium-high speed until fluffy, about 2 minutes.
  3. Scrape down the bowl, then add egg and vanilla and mix until combined.
  4. Add cocoa powder, espresso powder, flour, baking soda, and salt. Mix on low, gradually increasing to medium, until just combined.
  5. Fold in chocolate chips.
  6. Scoop dough onto the prepared baking sheet, spacing cookies 2 inches apart.
  7. Bake for 11 minutes, or until edges are set and centers are still gooey. Cool for 10 minutes on the baking sheet before serving.
