Ingredients

  • 6 Tbsp unsalted butter [85 g], melted
  • 3 large overripe bananas, mashed
  • 1 cup granulated sugar
  • 1 egg, room temperature
  • 1/4 cup Greek yogurt
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour [125 g]
  • 1/2 cup Dutch-process cocoa powder
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 425 F. Grease 10 standard muffin tins and line with cupcake liners.
  2. In a large bowl, beat melted butter, mashed bananas, and sugar until combined. Add egg and mix well.
  3. Scrape down the bowl, then add Greek yogurt and vanilla.
  4. Add flour, cocoa powder, baking soda, baking powder, and salt. Mix until no streaks of flour or cocoa remain.
  5. Fold in chocolate chips until just combined.
  6. Scoop batter into muffin tins, filling about 3/4 full. Top with extra chocolate chips if desired.
  7. Bake for 5 minutes at 425 F, then reduce oven to 375 F and bake 15 minutes more, until springy.
  8. Cool at least 15 minutes before eating.
