Ingredients
- • 6 Tbsp butter [85 g], room temperature
- • 3/4 cup granulated sugar
- • 1 large egg, room temperature
- • 3/4 cup nonfat Greek yogurt
- • 2 tsp vanilla extract
- • 1 1/2 cups flour [188 g]
- • 1 1/2 tsp baking powder
- • 1/2 tsp baking soda
- • 3/4 tsp salt
- • 5 oz dark chocolate, chopped
Instructions
- Preheat oven to 425 F. Line 9 muffin tins with muffin cups.
- In a stand mixer fitted with the paddle attachment, cream butter and sugar on high until light and fluffy, about 3 minutes.
- Beat in egg for 1 minute more.
- Beat in Greek yogurt and vanilla until combined.
- In a small bowl, mix flour, baking powder, baking soda, and salt. Add to wet ingredients and mix until it just begins to come together.
- Fold in chocolate chunks until just combined. Batter will be thick.
- Scoop batter into muffin tins, filling just shy of the top. Sprinkle tops with more granulated sugar.
- Bake for 5 minutes at 425 F, then reduce oven to 375 F and bake 15 minutes more, until golden and springy.
- Cool at least 5 minutes before eating.
