Ingredients

  • 6 Tbsp butter [85 g], room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 3/4 cup nonfat Greek yogurt
  • 2 tsp vanilla extract
  • 1 1/2 cups flour [188 g]
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 5 oz dark chocolate, chopped

Instructions

  1. Preheat oven to 425 F. Line 9 muffin tins with muffin cups.
  2. In a stand mixer fitted with the paddle attachment, cream butter and sugar on high until light and fluffy, about 3 minutes.
  3. Beat in egg for 1 minute more.
  4. Beat in Greek yogurt and vanilla until combined.
  5. In a small bowl, mix flour, baking powder, baking soda, and salt. Add to wet ingredients and mix until it just begins to come together.
  6. Fold in chocolate chunks until just combined. Batter will be thick.
  7. Scoop batter into muffin tins, filling just shy of the top. Sprinkle tops with more granulated sugar.
  8. Bake for 5 minutes at 425 F, then reduce oven to 375 F and bake 15 minutes more, until golden and springy.
  9. Cool at least 5 minutes before eating.
