Cheesy Broccoli Melt

A warm and melty sourdough sandwich filled with sautéed broccoli, garlic, and a blend of white cheddar and mozzarella. Quick to make, satisfyingly cheesy, and perfect for a comforting vegetarian bite.

Ingredients

  • 1 Tbsp butter, softened
  • 2 large slices sourdough bread
  • 1 Tbsp olive oil
  • 1 1/2 cups broccoli, roughly chopped
  • 1 clove garlic, finely chopped
  • Salt & pepper
  • 1/4 cup shredded white cheddar cheese (plus more for sprinkling on top)
  • 1/4 cup shredded mozzarella cheese (plus more for sprinkling on top)

Instructions

  1. Butter one side of each piece of sourdough bread and set aside.
  2. Preheat a large pan (with a lid) over medium heat and add the olive oil and broccoli. Sauté the broccoli with a sprinkle of salt and pepper for 2–3 minutes until almost tender, then add the garlic. Sauté for 1 more minute, or until the broccoli reaches desired tenderness. Turn off the heat and transfer the broccoli into a small bowl.
  3. Immediately add 1/4 cup white cheddar and 1/4 cup mozzarella cheese to the bowl with the broccoli and mix until the cheese melts. If the cheese does not melt, microwave the bowl for 30 seconds to 1 minute.
  4. Turn the heat back on the pan to medium. Place the bread, butter side down, on the pan and transfer the broccoli and cheese mixture onto one slice. Top with more cheese, cover with a lid, and cook for 2–3 minutes until the bread is golden brown and toasted.
  5. Close the sandwich with the grilled side of the bread facing out, cut in half, and enjoy.

Notes

Vegan modification: substitute plant-based cheese for cheddar and mozzarella, and replace butter with olive oil.
