Ingredients

  • 16 oz cream cheese, room temperature
  • 3 eggs
  • 1 Tbsp vanilla
  • 3/4 cup heavy cream
  • 1/4 cup sugar
  • 16 Oreo cookies, whole sandwiches
  • 32 Oreo cookies, whole sandwiches (for crust)
  • 5 Tbsp melted butter [71 g] (for crust)

Instructions

  1. Preheat oven to 350 F.
  2. Prepare the crust by crushing 32 Oreo cookies and mixing them with melted butter. Press the mixture into a parchment-lined 7-inch springform cake pan.
  3. Blend cream cheese, eggs, vanilla, heavy cream, sugar, and 16 Oreo cookies until smooth and pour the filling over the prepared crust.
  4. Place a baking pan with 1 inch of water on the bottom oven rack, then place the cheesecake on the middle rack.
  5. Bake for 40 minutes, until the cheesecake is still jiggly in the center.
  6. Cool completely at room temperature, then refrigerate for 6 hours before unmolding.
  7. Slice, serve, and enjoy.
