Bakery-Style Triple Chocolate Fudge Muffins

Ingredients
- • 2 1/4 cups all-purpose flour [290 g]
- • 1/2 cup unsweetened Dutch-process cocoa powder
- • 2 1/2 tsp baking powder
- • 1/2 tsp baking soda
- • 1/2 tsp salt
- • 1 tsp instant espresso powder, optional
- • 6 Tbsp salted butter [85 g], melted and slightly cooled
- • 1/3 cup olive oil or oil of choice
- • 1 cup granulated sugar
- • 2 eggs, at room temperature
- • 1 cup buttermilk, at room temperature
- • 1/2 cup Greek yogurt or sour cream, at room temperature
- • 1 Tbsp vanilla extract
- • 1 1/2 cups semi-sweet chocolate chips
- • 6 oz dark chocolate chips or chopped chocolate
- • 2 oz milk chocolate chips or chopped chocolate
- • 1 cup heavy cream
Instructions
- Line a muffin pan with liners, spacing them out if desired for taller muffin tops.
- In a large bowl, whisk flour, cocoa powder, baking powder, baking soda, salt, and optional espresso powder.
- In a separate large bowl, whisk melted butter, oil, sugar, and eggs until well combined.
- Add buttermilk, Greek yogurt or sour cream, and vanilla, then whisk until well combined.
- Fold dry ingredients into wet ingredients until barely combined and no flour streaks remain, then fold in chocolate chips.
- Cover and rest the batter at room temperature for 15-20 minutes.
- Preheat oven to 425 F and divide batter among muffin cups, filling to the top.
- Bake regular muffins at 425 F for 5 minutes, then reduce oven to 350 F and bake 15-18 minutes more, until a toothpick comes out clean or with moist crumbs.
- For jumbo muffins, bake at 425 F for 5 minutes, then reduce to 350 F and bake 25-28 minutes more.
- Cool muffins in the pan for 5-10 minutes.
- For the ganache, place milk chocolate and dark chocolate in a bowl. Heat cream until hot, pour over chocolate, let sit 3 minutes, then whisk until smooth and glossy.
- Hollow the center of each muffin with a spoon, knife, or piping tip, then pipe 1-2 Tbsp ganache into each center. Let sit 10-15 minutes before serving if a thicker ganache center is desired.
